Summer Cooking

So if you've seen many of my Tweets or Facebook status updates, you know that I love to cook! I especially get a kick out of trying new recipes and inventing my own. I tried one tonight that I'd love to share! It's a combination of a couple different recipes I'd had lying around and intended to try...but really they sounded a little dull on their own, so that's when I decided to add some additions of my own. It's a really fresh summer dish! I hope you like it!

Chicken Sorrento w/ Parmesan CousCous

Serves 6, Ready in 30 minutes

2 lbs chicken breast
3 zucchini, sliced in half lengthwise
1 ½ tablespoons olive oil
½ teaspoon black pepper
½ cup creamy Italian dressing
1 box Parmesan CousCous
½ cup diced tomato
½ cup frozen peas, cooked
½ cup freshly grated parmesan cheese

1. Heat olive oil in large, deep skillet on med-high heat.
2. Brush with oil and then pepper both sides of chicken AND insides of sliced zucchini.
3. Add chicken to hot oil, cooking several minutes each side. After 5-10 minutes, when slightly browned, coat each side with Italian dressing and cook until chicken is done in middle, another 3-5 minutes or so each side. Depending on thickness of chicken, this may take 12-20 minutes total.
4. Anywhere in the process above, you can add the zucchini (flat sides down) to skillet (if not enough room in pan, you can wait and cook them after the chicken is done). The zucchini will take 7-9 minutes. You want them to still be slightly firm.
5. While waiting for chicken & zucchini, prepare the Parmesan CousCous in another pot, exactly as directed on the box. When all the water has been absorbed and the couscous is finished, add diced tomato, parmesan cheese, & peas to couscous pot. Stir together. Set aside.
6. After the chicken is done, cut each breast into bite-size squares; after zucchini is done, slice each half into bite-size half-moon shapes (or halve twice for pie quarters).
7. Return chicken & zucchini to the large skillet with heat on medium, stirring for a few minutes to flavor the zucchini. Add the couscous mixture and parmesan cheese, heating through for a few minutes, stirring often, coating veggies & cous cous with chicken flavor.
